THE EASIEST blackberry banana chip blender pancakes- so soft and fluffy
Ingredients:
1 and 1/2 medium bananas
3 eggs
1/2 cup coconut yogurt- I used @culinayogurt
1 cup old fashion rolled oats (if you’re doing grains it’s super important to be sure they’re organic- we don’t want all that glyphosphate etc).
Chopped blackberries and chocolate chips (I do a dairy free option) as desired
Directions:
1. Blend all ingredients in the blender on high speed. Really be sure to blend well- no chunks, you want these to really fluff up.
2. After blending and mixture is entirely smooth- let the batter sit out on the counter for 5-10 minutes.
3. Heat skillet over medium heat with oil/butter- I typically use avocado oil.
4. Add blackberries and chocolate chips to batter as preferred
5. Once skillet is hot- pour and cook on each side about 4-5 minutes. This will vary depending on how hot your pan is as well how well done you like them. I like a good golden brown.
Topped with a little maple syrup and almond butter.
