There's nothing better than lunch ideas that only take a couple minutes to put together!
Ingredients
1. 4-6 shredded chicken thighs
2. 1/2 cup of chopped walnuts
3. 1/4 cup green scallion
4. 3 celery stalks chopped
5. 1 cup grapes halved or quartered
6. 3 tbsp of fermented sauerkraut (optional but good for the gut)
7. 1/2 cup primal kitchen mayo
8. 3-4 tbsp of balsamic vinegar
9. Salt pepper, garlic, and onion to taste
Directions
Bake or boil chicken and shred.
Add chopped veggies and chicken together in large mixing bowl.
Add mayo and seasonings and mix until well combines.
Fill siete cassava wraps with a little arugula and enjoy!
