These crunchy peanut butter bars are a must when you want a little treat!

PEANUT BUTTER RICE CRISPY BARS
A more balanced version of a rice crispy treat minus the marshmallows: SO GOOD
Ingredients:
-1 cup peanut butter (ingredients should just be peanuts and salt- you need the oily kind)! I used Teddy's smooth
-1 scoop protein powder of choice (I used BeWell by Kelly unflavored Protein Powder)
-1/4 cup organic hemp hearts
-2.5 cups gluten free sprouted brown rice crisps. I used gluten free organic brown rice cocao crisps.
-3/4 cup dairy free dark chocolate or chocolate of choice. I used Santa Barbara unsweetened dark chocolate
Directions:
1. On low heat add peanut butter to pot. Mix peanut butter for 3-5 minutes until soft and smooth.
2. Add protein powder and mix until well combined.
3. Add hemp hearts and rice crisps.
4. Once mixture is well combined remove from pot and pour into mold. I used a square cake pan. I recommend using parchment paper- makes it so much easier to remove and cut pieces.
5. Pat mixture down until flat and firmed together.
6. Over low heat add chocolate to pot on stove. Melt chocolate, be sure to mix continuously- you don't want the chocolate to burn!
7. Pour chocolate over the top of the crispy mixture and spread.
8. Top with a little flake sea salt! (optional)
9. Place in freezer for ~1-2 hours.
10. Remove from freezer and slice into squares. It’s helpful to run the knife under hot water before cutting. Helps provide cleaner and easier cuts!
